<p>Spring is almost here, but winter still has us in its grip. Get through these last few cold night by warming up with this white bean and bacon soup! It&#8217;s easy enough to make for a weeknight dinner, and would make a great frozen make-ahead meal. Make a big batch and bring some to work, or pack it in a thermos for lunch for the kids! This soup is delicious and is made from white beans, parmesan cheese, bacon, celery, garlic, chicken stock, and sage. Throw on that apron and let&#8217;s get cookin&#8217;!</p>

<li class="blog-yumprint-method-item">Soak the beans overnight in a bowl of water.</li>
<li class="blog-yumprint-method-item">In a large pot, add in olive oil and heat it over medium heat.</li>
<li class="blog-yumprint-method-item">Chop the bacon roughly and add it into the pot. Saute the bacon until it&#8217;s a golden color.</li>
<li class="blog-yumprint-method-item">Add in celery, onion, garlic, and sage. Saute until the onions are translucent (5-7 minutes).</li>
<li class="blog-yumprint-method-item">Take out the leftover oil with a spoon by tilting the pot.</li>
<li class="blog-yumprint-method-item">Drain the beans and place them in the pot.</li>
<li class="blog-yumprint-method-item">Add in chicken broth and bring the soup to a boil.</li>
<li class="blog-yumprint-method-item">Reduce the heat and allow the soup to simmer until the beans are tender (1-1 1/2 hours).</li>
<li class="blog-yumprint-method-item">Season the soup with salt and pepper.</li>
<li class="blog-yumprint-method-item">If you would like the soup to be smooth, you can put it in the blender and blend until it&#8217;s creamy. If you like chunky soup, you can leave it as is.</li>
<li class="blog-yumprint-method-item">Garnish the soup with parmesan cheese and croutons and serve with crusty bread.</li>

<ul>
<li>1/4 cup extra-virgin olive oil</li>
<li>1 large onion, chopped</li>
<li>4 garlic cloves, minced</li>
<li>2 1/2 tsp fresh thyme</li>
<li>2 tsp dried oregano</li>
<li>1/2 tsp crushed red-pepper flakes</li>
<li>1 dried bay leaf</li>
<li>1 can whole peeled tomatoes with juice, crushed</li>
<li>1 1/4 cups dry white wine</li>
<li>1 1/4 cups water</li>
<li>1 cup bottled clam juice</li>
<li>2 pounds shell-on king crab legs, cut into 2-inch pieces</li>
<li>24 littleneck clams, scrubbed well</li>
<li>1 pound firm, skinless white fish fillets (such as red snapper, sea bass, or halibut), cut into bite-size pieces</li>
<li>salt and freshly ground pepper</li>
<li>1 1/4 pounds large shrimp (about 30), peeled and deveined, tails left on if desired</li>
<li>1/2 cup coarsely chopped fresh parsley</li>
</ul>
<p><strong><span style="color: #99cc00;">Instructions</span></strong></p>
<ol>
<li>Heat oil in a large stockpot over medium heat. Cook onion and garlic until onion is translucent. Add in thyme, oregano, red-pepper flakes, and bay leaf.</li>
<li>Add tomatoes and their juice, white wine, water, and clam juice. Bring to a simmer.</li>
<li>Add crab and clams. Simmer covered, until crab shells turn bright pink and clam shells open, about 10 minutes. Season fish with salt and pepper. Add fish and shrimp to stockpot. Simmer, covered, until fish is opaque and shrimp are pink, 2 to 3 minutes. Discard bay leaf and any unopened clams.</li>
<li>Remove pot from heat and stir in parsley. Season with salt and pepper.</li>

If you&#8217;re impatient like us, there is a way to make your own! For this bread bowl, a thick, hearty soup works best. We especially love thick chicken noodle or potato soup! We used white flour in this recipe, but you can substitute it for dark for a healthy alternative. You don&#8217;t just have to put soup in these! <p>A thick, hearty soup goes best with these bread bowls! Try beef stew or potato soup! These bread bowls can be frozen for up to a month.</p>
<p><strong><span style="color: #99cc00;">Ingredients</span></strong></p>
<ul>
<li>2 (.25 ounce) packages active dry yeast</li>
<li>2 1/2 cups warm water (110 degrees F)</li>
<li>2 tsp salt</li>
<li>2 tbsp vegetable oil</li>
<li>7 cups flour</li>
<li>1 tbsp cornmeal</li>
<li>1 egg white</li>
<li>1 tbsp water</li>
</ul>
<p><strong><span style="color: #99cc00;">Instructions</span></strong></p>
<ol>
<li>In a large bowl, dissolve the yeast in warm water. Leave it to sit about 10 minutes until creamy.</li>
<li>Add the salt, oil, and 4 cups of flour to the yeast and beat well. Stir in the remaining flour, about a 1/2 at a time, and beat well with an electric mixer after each addition.</li>
<li>Turn out the dough onto a lightly floured surface and knead it until it&#8217;s smooth.</li>
<li>Lightly oil a large bowl and place the dough in the bowl. Turn the dough around to coat with oil. Cover with a damp cloth and leave it to rise in a warm spot until it has doubled in size. (About 40 minutes.)</li>
<li>When the dough has risen, punch it down and divide it into 8 equal portions. Shape each portion into a 4 inch round loaf. Place the loaves on slightly greased baking sheets that are sprinkled with cornmeal. Cover the loaves and let them rise again in a warm spot until they&#8217;ve doubled in size. (About 30-40 minutes.)</li>
<li>Preheat your oven to 400 F.</li>
<li>In a bowl, beat together the egg white and 1 tbsp of water, and lightly brush the loaves with half of the egg wash.</li>
<li>Bake for 15 minutes, then brush with the remaining egg wash. Bake for an additional 10-15 minutes until golden. Cool on a wire rack.</li>
<li>To make the bowls, cut a 1/2 inch thick slice from the top of each loaf and scoop out centers. You should be left with 3/4 inch thick shells.</li>
<li>Fill the bread bowls with hot soup and serve immediately.</li>
</ol>
